We are wanting to get a new fan for the bach as it's often stinking hot which makes sleeping difficult. 

 

We have a pedestal fan now and it's OK, but it's mostly just moving existing air around. 

 

We had seen some decent specials on Dyson fans, but they are still 5 x the price of even a fancy other type of fan. Do they actually cool a room better than a traditional fan?

Dyson fans do not have any marketing material which suggests that they cool. Only an air conditioner can perform this function.

 

Things I like about the Dyson is the remote, the connectivity and the performance.

Right, that's pretty much my understanding. I didn't know if they had some sort of secret sauce that allowed them to have a cooling element or something else that helped. Is the price difference for Dyson then that they are quieter, have filtration and are fancy looking?

 

 

Moving air evaporates water off your skin/hair.  This has a cooling effect.  Hence the term 'wind-chill'.
