I'm wanting to do some testing very shortly with a new firewall, but instead of trying it on my current network, I was wanting to plug it in to my fiber ONT and just establish another PPPoE session, so essentially being two different networks.

Hardware aside (using the chorus fiber ONT), does BigPipe limit the amount of concurrent PPPoE connections on a given line?

If you also know whether the ONT will support concurrent sessions, let me know.

only one ethernet port is active on the ONT per provider - if you already have a connection to your router, via that port, you cant connect another - single mac addresss etc apply to the connection

PPPoE limits will be imposed by your ISP, not the ONT. The ONT is merely a L2 bridge and the only ACL limitations it imposes are MAC address ones (with varying MAC limits depending on the connection type)

I would be surprised if any ISP in NZ allowed multiple PPPoE sessions from the same user credentials.

I managed to accidentally get 2 separate PPP sessions working at the same time on my Snap account. It happened due to me giving my Fritzbox to my parents who had just signed up to Snap themselves. I reset it to default settings. And it then auto configured with my credentials despite it being plugged in at their house. I only realised when they contacted me asking why the phone wasn't working. (I have a naked connection) Yet my internet still worked fine. But if my connection had dropped the PPP session...............?

PPP by its very nature is a Point-to-Point Protocol meaning that anything configured for it is going to allow a single PPP connection over a single link, In theory if you had the ISP liven up another port on the ONT you could have a second PPPoE session down the second link but this would require activating a complete second internet connection so they may as well just give you another set of PPPoE credentials. (this was the case for Aredwood, A second link or connection was used elsewhere but the PPPoE credentials where still valid, This indicates multiple connections are accepted by default but ofcourse you still need a second connection to use those credentials which would have come with its own credentials)
