I've noticed that our fibre ONT box is has a cable connecting to a regular old fashioned phone jack. The phone jack has another cable in which I presume is the old copper line.

Does anyone know why the ONT device is connected to the phone jack? Would it cause any problem to disconnect it? We don't use a landline and it's just more cables getting in the way.

Thanks.

Yep you can disconnect it.

The ONT can have a phone service running on it if the provider supports it. As you don't have a phone line activated you don't need to have it connected.
