The 12V appliance thing might be the easiest, you can readily get 12V fridges which is the thing that's typically needed the most, some 12V -> 5V UBECs to charge stuff, and then you're mostly sorted. Also if you're going down that path consider marine gear as well as the usual camping/caravanning gear, some of that runs off 12V as well.

Not all 12v fridges are equal, so be aware of the technology you are dealing with/buying. There is at lease 3 technologies (3way/Ammonia, peltier effect & compressor) and all except 12v compressor will savage your batteries. If you have a 3 way fridge plan to use it on gas, and only on 12v when the your engine is running unless it is a short term emergency.
