Good call... don't go changing anything antenna wise till you've seen what a Freeview pix looks like.

You're in Christchurch, which being flat has good signal coverage with minimal interference.... you don't need really high gain antennas there to get enough signal for quality analogue signals or digital ones.

I believe to one TV will be fine. I have to wait to see the picture quality until all 3 TVs are on freeview....

By the way, will high gain antenna damage the electronics component if the signal is "too strong"?

They won't damage anything, but if you end up buying a MagicTv or Panasonic Freeview DVD / BluRay recorder - then a split UHF / VHF aerial may not work without a Diplexer to split the UHF and VHF signals.
