I'm about to receive my new UHD 55inch TV tomorrow...

My devices that I want to connect to the TV are

mysky+
Panasonic Blu ray player ( 4K up scale)
Apple TV

They will be connected to the 3 HDMI ports separately.

If I connect an optical cable from the TV straight to the sound bar, would I effectively be able to listen to the 3 HDMI connections directly from the sound bar.

Yes.
A few words of caution though.
Check your sound bar specs, if it cannot decode Dolby AND DTS, you'll want to change your audio input settings on the ATV / MySky / Blu-ray to PCM, then lock the TV onto PCM for its sound output...
If the sound bar is of a decent enough quality, it should handle DTS or Dolby audio fine over optical, in which case, it's a simple case of plug 'n play!

The other option with some sound bars is plug all 3 HDMI cables into that, then an HDMI from sound bar to TV (I have a Sony soundbar, and I do this as then I only need one HDMI cable going from Soundbar (on cabinet below TV) up to TV (mounted on wall). When the house was built, they only ran one HDMI to behind the TV.

I have a basic Philips sound bar and no HDMI input(s) on unit and the TV to be mounted on a omp haikurangi stand.

Model no of sound bar is HTL 5100 with only optical, coaxial and normal analog inputs... Seriously thnkng of dropping the sound bar altogether and just having sound thru the TV.

TV delivered by Noel lemming with 1 hour of expertise connection and learning about the TV.

Thoughts?

That looks fine - connect it the way you've discussed, and maybe buy a Soundbar bracket that will attach to the back of the OMP stand you've mentioned. This way, the soundbar literally hangs off the bottom of the TV (if there's room) and is at an 'ideal height' for audio performance.
Sadly, the Philips will need all it can get in this area.
