(Almost) authentic Pad Thai. I had run out of fresh headed shrimps.

We got the cast iron braiser from New World's Smeg promo.  Tonight was to be roast chicken so I put the two together.

  1. Preheat oven to 200 deg c, conventional
  2. Pat dry and sprinkle chicken with smoked paprika and salt
  3. Brown both sides of the chicken on moderate temperature, in a braiser on the stove top
  4. Transfer the chicken to a clean dish and put in the oven, keep enough of the chicken fat for the next part
  5. Saute finely chopped onion in the braiser
  6. Add your favourite chicken herbs.
  7. Add a can of chickpeas and once cooked or heated through, add a can of tomatoes and some garlic
  8. Add white wine or sherry (that's optional) and chicken broth.  I used an oxo-cube.  Bring up to temp.
  9. Transfer chicken back to the braiser.
  10. Cook in preheated oven.

I used fennel seeds, dill tips and a single star anise.  If you're not against fruit in hot meals, some apricots wouldn't go amiss.

Tinkerisk's breakfast recipe

Ingredients: (use organic ingredients wherever possible!)

4 chopped almonds

4 chopped walnuts

4 chopped dried dates

1 teaspoon pumpkin seeds

1 teaspoon sunflower seeds

3 teaspoons psyllium husks

1 tablespoon ground flaxseed

1 tablespoon spelt flakes

3 tbsp oat bran

1 pinch ground cinnamon

1 pinch freshly ground black pepper

5 tbsp plain skyr

1 finely chopped apple or pear

1 handful blueberries or raspberries

1/2 chopped large orange

Mix everything together in a bowl and leave to stand for half an hour. Then add whole milk to achieve the desired consistency.

Drink plenty of unsweetened beverages (water, tea, coffee) with it, as the seeds will swell!

Yes, I know – breakfast is usually different for most of you. But no one is forcing you to eat it. 😉😎

Nevertheless, bon appétit!

I like that, but it seems like a lot of work :) I guess you prep it a few at a time?

You can also prepare and store larger quantities of your favourite mixture, using only the dry ingredients.

Then all you have to do is add the fresh fruit and dairy products, and you're done.

BTW, my extended family has persuaded me to fill the cookbook app in our Nextcloud with recipes so that they can be easily shared and, above all, so that they can fill the shopping list on their smartphones with the things they don't have at home at the touch of a finger.

No wonder, when even mediocre restaurants charge €12.90 (NZD 25.14) for a tiramisu dessert here.

I don’t use the Nextcloud version but I really rate Mealie as a self hosted option. It’s very easy to use and very good.

Yes, it looks good and the functions are very similar. But since we already use Nextcloud with many functions (even for video calls) within our family and circle of friends, it was the most obvious solution. But that's enough OT for now.

Shakshuka – for breakfast, lunch, as a snack, for dinner... however you like it, it always fits the bill.

When frying eggs, don’t turn them. Instead, add water to the pan and put on a lid to finish with steam.

Will try this tomorrow as I always flip and they slide around in the oil and splash. We have a Scanpan stainless steel frying pan for the eggs as am over coated cookware.

I put olive oil in the pan and then gently add the eggs. All cold not on the heat. Make the tea and then turn on the eggs from cold. Once they start to cook one side then I flip, the eggs never stick to the pan. will try your water trick to see if I can avoid flipping but I suspect they may then stick.

I don’t wash the pan, just leave it with a lid on till next morning. Once a week I give it a wash and start over.

Froached eggs! Not sure if it's a real term for it, but we call it froaching 🤷‍♂️.
