Generally the faster bread toasts the less it gets toasted in the middle. Its a balance.

Personally, I prefer my toast less cooked in the middle, I just want the lightest of toasting on the outside. Dry hard toast is one of the worst things to eat for me personally.

Crunchy on the outside but still a little soft in the middle is the pinnacle of toast.

 

For Vogels, it's done when it just starts to go a little brown around the edges. More than that you're just turning it into dry cardboard - yuck.
