I wouldn't recommend it for everybody, as the process can be quite confusing, but I have no regrets doing it. Apps2SD+ is brilliant.
Basically, rooting gives users more control over their phones, and also means installing custom software (ROMs) that developers have "cooked up".
For instance, there are Froyo (Android 2.2) ROMs floating around on the place already, which give our Desires 720p video recording, and of course, the latest Android 2.2 :P
I'm not brave enough to venture into custom 2.2 ROM territory yet though, as there are quite a few bugs that the devs need to iron out :)

We were promised in the HTC phone catalog leak at the end of last year that the HTC Desire (then codenamed the HTC Bravo) was to support 720p. So let's hope our dreams come true when 2.2 rolls around!! :D

Hi Nathan, couple of rooting questions.
I assume you lose all your apps and settings? Do you have to pay for your paid apps again? Do you miss any of the HTC Sense features? Who's root did you use? I assume once you root you cant go back? Who shot JFK?
I assume you lose all your apps and settings? Do you have to pay for your paid apps again? - Yes, you will need to reinstall your apps and re-calibrate your settings. That didn't bother me too much, as I didn't have much installed anyway, before I started getting the dreaded "memory low" notification (primarily why I rooted, as my Gmail. - In terms of paid apps, no, you don't have to pay for them again. So long as you use the same Google account with your phone, as I believe all purchases are account-specific. I just jumped straight back onto the Android Market, searched for the app(s), and they were all labelled as "Purchased". Just had to download them again :)
Do you miss any of the HTC Sense features? - The custom ROM I flashed with is based on the default HTC 2.1 ROM unrooted phones have, so I haven't lost any HTC Sense functionality. - I stopped using HTC Sense quite a while back, even before I rooted, as I've found LauncherPro Plus to be superior by far. At first, I missed the HTC widgets (they are built into HTC Sense), but I've since found alternatives for them.
Who's root did you use? - It's in my signature. I think it's Paul O'Brien's HTC Desire MoDaCo ROM r3.1 (can be found at the MoDaCo forums). Rooting and installing a custom ROM is a two-step process; the first being the root itself. I also followed Paul's step-by-step guide at the MoDaCo forums :)
I assume once you root you cant go back? - I believe you can "unroot" your phone if you want, as the original HTC Desire ROMs are available around the net. But I can't imagine anyone wanting to do that :P

slag: Another question about rooting: I've rooted my Desire (and it's been awesome), but the ROM I installed doesn't come with Apps2SD.
I've since found a guide to install Apps2SD, but this goes through the whole goldcard/rooting procedure first (which I've already done).
Does anyone know if I can simply follow the part of the procedure that installs Apps2SD, and simply add it to what I already have?
If you have already rooted, I think you should be fine just following the Apps2SD section. Although I would recommend a full factory wipe first, just to minimise any possible app errors for the apps you already have right now. Don't forget to partition your SD card too, otherwise Apps2SD won't work.
The goldcard bit is only necessary if your phone is locked with a specific carrier, so I don't see why not :)

Download a program from the android market called 'apn manager' (or something like that; lets you save off your APN settings).
Run it, and export/backup ALL your APN's to your SD card. Just in case.
Then WIPE all your apn's (apn manager has the option right there). Delete them all. None left. including the hidden ones. Got it?
THEN enter your CORRECT 2degree's APN's. Exactly as people have told you here. Better still: APN manager has the ability to email your APN settings - someone here with WORKING settings could email them to you and you import them.
I had some funny trouble with them myself for a while - on slingshot. But i noticed a curious thing: it seemed to be picking up vodafone's settings. Seems that some/all HTC Desire's come pre-installed with a couple of hundred APN settings and my phone was getting confused about what it should be using.
(Stupidly enough, Slingshot does not seem to be able to make SIM cards properly - MINE has the bloody vodafone voicemail number LOCKED into it!!! Hopefully 2degress aren't THAT stupid).
The theory is this: wipe out ALL other (hidden) choices it might trip up on, giving it ONLY the correct one.
Should noobs root?
I wouldn't advise it. You can ruin your phone for good, beyond repair.
If I were you (no offense), I'd wait until I am the guy ANSWERING a lot of the curly questions posted here, not the guy asking them.
It's not that complicated - but if something does not go EXACLTY right, or the instructions are slightly vauge for rooting (a lot of them are), you will quickly get to a point where you are saying "that's not right... ", panic, pull the battery out or something, and .... end up selling it for parts on trademe.
Having said that... I found it quite simple, but maybe I was lucky. YMMV.
