What’s that insert? I’m looking at a concrete bbq. About 1.2 wide by 400ish. Mostly for rotisserie. But want some sort of pizza oven insert for it. Is that the Weber one?

The Italian pizza ovens run at 400-450C, takes 90 seconds to cook a pizza. I’m trying to replicate that without building a wood fired oven, as I’m renting.

They run at that temp but the fire is on the side not directly under the pizza. It's a bit more forgiving as there is less direct heat than a fire directly underneath the base

I usually crank the oven up to maximum, but that’s only 280C.

I've only seen YouTube reviews which were positive with a few caveats.

At least it gets the fire to the side rather than below the pizza.

The problem with fire underneath the firebox is too much direct very intense heat. I'm going to play around with using more charcoal and not using wood to see if I can get it hotter without burning the bottom of the crust too much.

In the end it's a simulation of a pizza oven rather than the real thing but the learning process is the fun bit for me.
