That's a murderin' offense right there.
I find Jeds a bit oily which indicates a lack of freshness.

Agree with your Dad. We were on Jeds #4 for a long time, but had some bad experiences with it (worst was a very odd tasting batch which we complained about, but they never replaced it). So now, Hummingbird Oomph, warm tasting and quite chocolatey, and much less aggressive than Jeds.

Considerably cheaper at Pak N Save in Petone (Was around $7.50 a bag), rather than a Johnsonville Countdown (Closer to $10)
Failing that, the Jeds Black bag one isn't too bad either.

Jeds Whole Bean No5. We buy by the 6 pack carton when on special at Countdown which is usually $6ea (which it is this week)

and yes it is capital offence to touch the machine settings.
Whilst the difficult we can do immediately, the impossible takes a bit longer. However, miracles you will have to wait for.
at my 'local' pak n save we get Coffee Supreme, and People's Sebastiana Martinez. Jeds #4 also figures in that rotation.
I am concerned by the fact that no one is talking about what machines they are using.
A certain type of bean will taste different in different machines due to all of the variables.
I strongly suggest trying a few of the different ones mentioned or start with a single easy to find brand that is in your price range and try a couple of different blends.
we ended up settling with L'affare Primo beans ($9ish but often on sale for $7ish) and we use a DeLonghi Magnifica (Automatic grind etc, manual steam). Primarily have short blacks but it has a steam spout for when visitors come.

in a La Cimbali M21 Junior and speaking of taste influences:
a Mazzer electronic grinder (I don't know one of the 256 grinds at the moment, but is the most important)
medium water hardness range: (1.5-2.5 millimole calcium carbonate per litre).
kitchen altitude: 56ft/17m A.M.S.L.
kitchen temp range: 20-28 DegC
And what does that bring you now?
Taste buds are a very individual thing and even depend on air pressure (just think of the coffee in the airplane). It is relatively futile to imitate anything that depends on so many factors. Instead, it is better to find your personal taste, and the best way to do that is to try it out on the spot, preferably where the coffee is to be drunk.
