So, we are back from Ireland and something we miss is the pork - particularly the ham, bacon and sausages. We think this is a mix of sourcing and preparation (opinions welcome).

Specfically the steaming process for preparation for ham and foreign sourced pork.

We are in Wellington and want to know where to get an NZ grown raw ham for xmas - assuming this lets us match our experience in Ireland...

Best bet would be Moore Wilson. They are well known for their quality produce.

As for sausages, that's harder as the quality is generally not that great, especially in supermarkets.

I can recommend the Blackball Cumberland sausages from Moore Wilson: pretty good. Also the L'Authentique ones made by some French guys in NZ - very good.

Yes have found the L’Authentique, they are the only sausages we buy...

We've been buying our xmas hams from Hardy Street Meats in Waterloo (Lower Hutt) for years, they have Freedom farm pork. Their home made sausages are good too.

Island Bay butcher for sausages, and Cameron Harrison butcher in Ngaio for everything else.
