Yeah don't bother hunting anything without a perfect pelt, it's a waste of time. The lasso is the best for hunting, if you can get close enough to the animal. Lasso it and then knife kill it. That'll yield a perfect pelt and body.

The animal has to have three stars in its status. Hold L2 to have it in focus or scope in with a rifle scope and hold R1 to study/examine it. It'll tell you the animal status and also exactly what to use to get a perfect pelt. Once studied, use Deadeye (R3) to see critical points on the animal for a clean kill.

You still need to scan the animal and look for the best one before you take it down first. There are poor animals that aren't worth hunting in the first place. So no matter how cleanly you kill them you still get a poor pelt.
So I am starting to get somewhere. I am still in act2 and I managed to kill the legendary bear, must have been but the smallest of margins in it. Couldn't find the trapper, jumped on google and was told it was over the far left or far right of the map. Went left was marginally closer, nothing over there, that area isn't unlocked. However, I did see some wonderful sights, found 3 more legendary areas and found a white horse which I managed to lassoo but couldn't stay on with my low stamina. Gonna go back and get it tonight if I can.
Ended up going side to side on the map which was extremely tedious, got attacked 3-4 times. JUST managed to stay alive, all for a measly $60 for the pelt. It's a reasonable amount compared to what I had, but was underwhelmed honestly.
Hunting seems exceedingly tedious, as far as I can tell, you can only carry one thing at a time, so it's hunt and race back to the trapper or butcher for a couple of dollars maybe.

Doing chores around camp gets you longer deadeye, and other things help to level it up. Using Cocaine Gum in fights gets you longer deadeye. Mine lasts about 10 seconds now, and I get about 3 uses before I have to top up on gum.

Carry on with story items until the map starts to open up. The trapper comes along as the story progresses. If you try to roam too freely too soon you'll get owned. Read my post yesterday about the camp resources etc.

Trapper wanders across the map. Only permanent residence is in St Denis.
Horses are easier to tame by slowly approaching them. Hold L2 to focus and walk towards them, stop and hit square to calm them down (theres a bar down the bottom right that shows their calmness). When you get on pull the analog stick down (as if you want to walk backwards) and against the direction the horse is moving ie. down-left for the horse going right and down-right for going left.
You can have multiple medium pelts (eg. wolves, deer, bucks) on your horse, they stack up on your horse's butt. Large pelts (eg. bear) take up the large spot as if you were carrying a carcass or person so you can only have one. Pelts don't decay so you don't have to worry about time, only about getting back safely.
But yea, its not really for the money that you get pelts. You want to hunt specific perfect pelts for the satchel/equipment upgrades you get from Pearson at camp or the Trapper. If you want money treasure hunts are a bit more lucrative.

I'm constantly taken aback by the random attention to detail in this game. I was trotting around the other day on Neville (my trusty steed) and came across a lumberyard where a bunch of NPC lumberjacks were felling trees. All of a sudden one of the trees fell badly and crushed an unfortunate lumberjack, so a bunch of others ran over to help lift the tree and drag him out. I ran over to see if I could help but couldn't seem to do anything. They freed him and then his foreman came up and told him to go home to shake it off, and obviously he wouldn't be getting paid for today. I flicked him $5 and then the foreman shouted something at me while walking away, like "not like you did anything, you were useless" or something like that LOL.
Is Neville a horse, or is the relationship side of this game quite "varied" too ? :)
How do you give people money ?
I managed to complete my first random NPC event the other day, so I have passed 2 and failed about 8 for stupid reasons, and I was walking through Valetine and the guy is with his friend and yells for me to come over, starts telling his companion I saved his life etc etc and gives me a free gun at the Gunsmith. I do like the continuation of these side missions on the main story line.
